Salmon Risoto

Part 1: Sauté Shallots Until Slightly Brown
1. 1 Tablespoon of Shallots
2. 1 Tablespoon Butter
3. 2 Tablespoons Extra Virgin Olive Oil
In a large saucepan, add these ingredients. Using Medium heat, sauté Shallots until slightly brown
Part 2: Cook Risotto
1. 1 Cup Risotto
2. ½ Cup White Wine
Add the Risotto and White Wine to the large saucepan with the sautéed shallots and cook for 30 minutes on medium heat
Part 3: Add Salmon
1. 6 oz. Salmon, cut into pieces
Add the pieces of salmon to the cooked Risotto in the large saucepan.
Cook for 5 minutes
Part 4: Add final ingredients
1. ½ Cup Chopped Spinach
2. ½ Cup Heavy Cream
3. 3 Tablespoons Grated Parmesian Cheese
Add these 3 ingredients to the saucepan. Stir for 2 minutes and the Salmon
Risotto is ready to serve!
