Watergate Cake
Ingredients:
- 1 Box white cake mix
- 3 eggs
- 1 c vegetable oil
- 1 c lemon-lime flavored carbonated drink
- 2 (3 ounce) packages instant pistachio pudding mix
- 1 cup frozen whipped topping, thawed
- 1 cup cold milk
Directions:
- Combine cake mix eggs, oil, soda drink and 1 box pistachio pudding.
- Pour batter into a greased and floured 13 x 9 inch pan or 2 round pans or a bundt pan.
- Bake at 350* for 30 – 40 minutes, or until a toothpick inserted into cake comes out clean. Cool completely.
- While cake is baking, mix 1 box of pistachio pudding, whipped topping, and milk. Chill. Ice cooled cake with chilled frosting.
This cake is great with any pudding flavor. The pistachio pudding is wonderful for a St. Patrick’s Day celebration with its limey green color. I’ve enjoyed this cake, over the years, at my Mother In-laws. The recipe was passed down, to her, from her Mother In-law.
