Mushroom Risotto

INGREDIENTS:
1 Pound Risotto Arborio
1 Chopped Shallot Onion
1 Stick of Butter (or ¼ lb butter)
1 Cup White Wine
4 Cups Chicken Broth
2 Table Spoons Extra Virgin Olive Oil
½ Pound Wild Porcini (Mushrooms)
Chopped Parsley
Grated Parmesian Cheese
Salt & Pepper Per Taste
HOW TO PREPARE:
I. First, Prepare the Risotto
1. First, boil water and add 1 pound of risotto
2. After boiling risotto in water for 10 minutes,
drain water
II. Second, Prepare the Mushroom Sauce
1. Heat a stove burner to Medium
2. In a large pot, saute olive oil, stick of butter,
and chopped shallot onion
3. Add mushrooms and stir a bit
4. Add white wine and stir a bit
5. Add pinch of salt and pepper and stir a bit
6. Add the 1 pound of risotto to this large pot
7. Add chicken broth and stir for 5 minutes
8. Turn the burner o# and let cool for about 1
minute
9. Add a handful of Parmesian Cheese to mix
into the risotto
10. Stir this for a couple of minutes and let cool
a bit
11. Serve
12. Sprinkle Parsley on top per taste
13. Sprinkle Parmesian Cheese on top per taste
