Fregola Sarda

STEP 1: Prepare the Fregola Pasta
- Use 16 oz of Fregola Pasta
- Put into a medium-size sauce pan and heat in the pan on medium heat for 8 minutes (by itself, no oil, no butter)
- Add seafood broth to the sauce pan (about 1 cup) and bring to a boil, then let simmer for 8 minutes
STEP 2: Prepare the Sauce and Toppings
- In medium sauce pan over medium heat, add 3 cups of fresh crushed tomato sauce
- Add clams (8 recommended)
- Add 1 cup of clam juice
- Add white wine (1/2 cup)
- Add mussels (8 recommended)
- Add shrimp
- Mix together and heat for 10 minutes
- Add everything in this sauce pan to the other sauce pan with the Fregola Pasta
- Mix together
- Top with extra virgin olive oil
- Top with a sprinkle of “Botarga” (Sardinian dry caviar)
