Bucatini All'Amatriciana

1 Tablespoon Extra Virgin Olive Oil
½ of a Medium Yellow Onion, Chopped Into Small Pieces
1 Clove Garlic, Chopped
2 Tablespoons Chopped Bacon
2 Cups Tomato Sauce
Pinch of Salt
1/2 Pound Bucatini.
1. Heat oil in a 12-inch skillet. Add onion, garlic, and bacon, and sauté over medium heat until beginning to brown
2. Add Tomato Sauce. Cook about 15 minutes, stirring periodically. Add pinch of salt and stir. Remove from heat.
3. Bring a pot of salted water to a boil. Add Bucatini and cook until al dente, about 8-10 minutes. Drain and transfer to the 12-inch skillet. Gently reheat contents of skillet, mixing the pasta and tomato sauce together until they are heated through and pasta is well-coated – about 5 minutes. Add any cheese for topping. Serve.
